Easy Grass-fed beef & potatoes

Beef & potatoes- a classic for a reason! One of my favorite things to make is a bowl of lean grass-fed beef bowl. It’s so filling, so good for you, and can’t get any simpler! Also it’s incredible as a meal prep, and can easily be flavored with different seasonings to create a unique dish everytime.

Ingredients:

Beef: Ground Grassfed 93% Beef, avocado oil, white onion, garlic, Balsalmic vinegar, tomato paste, cherry tomatoes, parsley, and seasonings of your choice

Potatoes: Yukon gold potatoes, himalayan salt, extra virgin olive oil, garlic powder, toppings of choice (I used cheddar cheese, bacon, butter, non-fat greek yogurt, and parsley flakes)

Directions:

  1. Preheat oven to 450 F. Wash potatoes, and coat with olive oil, salt, and garlic pepper. Wrap each potato in tinfoil and place on baking sheet.

  2. Chop onions and mince garlic. Turn on skillet to medium heat. Coat pan with avocado oil. Add onions when hot and top with salt. Cook for about 10-15 minutes until browned- periodically add water while cooking. The last 5 min, add minced garlic. Set aside.

  3. In same skillet, coat with avocado oil and turn to medium/high heat. When hot, add ground beef. Cook about 5 minutes, then add 2-3 tbsp of tomato paste and chopped cherry tomatoes. Cook for another 5 min, then add onions & garlic, top with parsely, and set aside. Take block of cheddar cheese, and stick in oven to quickly melt and soften.

  4. Quickly wipe down skillet, turn medium/high heat, and begin frying bacon until crispy. While bacon is frying, check potatoes. It will be ready when the potatoes are easily sliced with a butter knife (about 30 min total)

  5. Plating- While potatoes are hot, slice an X shape in the center and add butter, melted cheddar cheese, chopped bacon, parsley flakes, and serve with greek yogurt (or sour cream if you prefer). Add ground beef and tomatoes and serve!
